We LOVE salmon. By far it is one of our favorite things to eat for dinner. There is the saying about 1,001 things to do with chicken. That is how I feel about salmon. One of our recent favorites has become this sweet chili glazed salmon. I have made this easily five times since last month and made it once again on Friday. So easy, so few ingredients, you can’t help but love this dish. If you’re asking yourself what to do for dinner tonight, make this recipe and I promise, you will end up adding it to your rotation like we did.
4 salmon fillets
1/4 cup of sweet chili sauce
1 and 1/2 tablespoons of orange marmalade
3 tablespoons of soy sauce
Salt, pepper, and garlic powder to taste
Mix together all ingredients to create the marinade
Place the salmon skin side up in sauce
Cover and refrigerate for 1 to 5 hours
Preheat the oven to 400 degrees
Bake for 15 minutes
Meanwhile heat the remaining marinade in a sauce pan
Serve salmon with additional glaze over the top
PS: Sorry for the lack of completed picture. I had three hungry MPs to feed Friday and we devoured it all before I remembered to take a picture. Next time for sure though.
