Cajun Butter Chicken

The other night we had Date Night. So much fun, I love when we set aside time to be together totally unplugged. No computers or iPads, no phones or apps, just us enjoying an evening together. For dinner I made us, the Cajun butter chicken I made for the Christmas party. Y’all this is so incredible. I promise if you make this, everyone will be begging for the recipe. It keeps the chicken so moist, it just falls apart as you eat it. James has requested this be worked into the regular food rotation from now on.

And the big secret…. (Cajun Injector Butter)


Preheat your oven to 400 degress

Grease your baking sheet and lay out the chicken

Inject a fair amount into each chicken breast (I use one full syringe worth on each breast)

Add the Cajun seasoning, then flip your chicken over, and season the top side as well

Cook the chicken for 10 minutes, then flip and cook for 10 more minutes

And there you have it super easy and delicious chicken in 30 minutes. However, that is not even the best part of this chicken. I got three meals out of your chicken. That’s right Three!!!

The following day, we made quesadillas with a portion of the left over chicken for lunch and the day after we had Caesar salads for lunch. That is one more thing to love about this wonderful dish.
