Blackened Salmon Caesar Salad

After two Thanksgivings on Thursday, I decided dinner last night needed to be light and very healthy. This salad, will stick with you all night (or day for lunch) and at about $3 a salad, you cannot beat it.

Ingredients

4 salmon fillets

2 Tbsp of olive oil divided

Old Bay’s Blackened Seasoning

A bag of spinach leaves

Caesar dressing

Parmesan cheese

Directions

Preheat the oven to 400 degrees

Cut four pieces of parchment paper to fold the salmon in

Pat dry each fillet

Place each fillet (skin side down) onto the paper and coat each with 1/2 Tbsp of olive oil

Add the seasoning in a generous even layer

Flip the salmon to skin side up, fold the paper up and place skin side down with edges tucked in on the baking sheet

Bake for 15 minutes (salmon should still be pink and flake apart with a fork)

Rinse and dry the spinach

In a large bowl add he dressing, then spinach to mix

Portion onto each plate and sprinkle cheese

Place a fillet on top of each spinach bed, adding extra cheese

Serve
