Chicken Parmesan

Ingredients

1 package of thin chicken breasts

1/2 of a cup of Panko bread crumbs

1/2 of a cup of Italian seasoned bread crumbs

1 tsp each of salt, pepper, garlic powder, dried parsley, dried oregano, and dried basil

1/4 of a cup of Parmesan cheese

1 Tbsp each of melted butter and olive oil

Cooking spray

Jar of red sauce

Shredded mozzarella

Directions

Blend the Panko and Italian bread crumbs

Add in salt, pepper, garlic powder, dried oregano, and dried basil

Mix in Parmesan cheese

Between two sheets of parchment paper pound out the chicken for even cooking using the top of the sauce jar

Mix the olive oil and butter together, use to coat the chicken on each side

Cover the chicken with the breadcrumb mixture, be sure to press down on each side to coat them well

Lightly spray the nonstick spray to help brown the bread crumbs

Bake for 8 minutes, then turn over baking for 7 more

Add the red sauce on top of the chicken and the mozzarella, baking for an additional 2 minutes
